Here are recipes that I enjoy making for dinner or that I have been given that we like to eat.
If you know me, you know I don't cook, I don't like to cook. Which is why before Chase and I met, I told people I would find a guy who likes to cook... and I DID!!! He is amazing at cooking and I enjoy watching and learning from him. I still don't like to but when I do I find easy recipes that don't take a lot of prep time or time to cook.
Here is where I will share them... If I can make it, ANYONE can!!
ALL these can be pre-made and frozen until wanting to eat them.
~ Crock Pot Chicken (I got this from my friend M'Rhea) **Picture to follow**
2 Chicken Breast (frozen) 1 can Rotel tomatoes
1 can corn (DO NOT drain) 1 can black beans (drain & rinse)
1 pkg ranch dressing mix 1 T cumin
1 t chili powder 1 t onion powder
1 8 oz pkg cream cheese salt, pepper, garlic to taste
Put chicken in pot. Top with tomatoes, corn, drain and rinse beans, ranch dressing, cumin, onion, chili powder. Stir to combine then top with cream cheese. Cook low for 6 - 8 hours, stirring once or twice to blend in cheese. Before serving use fork to shred the chicken into pieces and mix ingredients. Serve over rice (optional).
**IF you pre-make this and want to freeze, do not put the cream cheese in until you want to cook in the crock pot!**
~ Crock Pot Pork Loin Roast **Picture to follow**
Pork Loin Roast (not a lot of fat)
1 cup BBQ Sauce
1 cup Coke-a-Cola (seriously Coke not substitute- you can't taste it because it's cooked- TRUST ME)
minced onion
Place roast in pot. Mix Coke and BBQ sauce together then pour over roast in pot. Cook 6 - 8 hours. Pull apart with fork and put some juice if needed over the pieces. Serve on bun.
~ Ricotta and Spinach Stuffed Manicotti **Picture to follow**
1 (15 oz) container ricotta cheese 1/4 t garlic powder
1 (10 oz) pgk frozen chopped spinach,
thawed & squeezed dry 1 1/2 cups shredded mozzarella
1/2 cup minced onion cheese, divided
1 egg 1/2 cup grated Parmesan cheese, divided
2 t minced fresh parsley 6 1/2 cups Classico Tomato and Basil sauce
1/2 pepper 1 1/2 cup water
1 (8 oz) pkg Manicotti shells
Preheat oven to 350 degrees F (175 degrees C). In a large bowl, combine ricotta, spinach, onion, and egg. Season with parsley, pepper and garlic powder. Mix in 1 cup mozzarella and 1/4 cup parmesan (**This is not ALL of the amount asked**). In a separate bowl, stir together pasta and water. Spread 1 cup sauce in the bottom of a 9 x 13 in baking dish (**IF you pre-make this to have for later, put half the shells in a foil tray- disposable kind- 8x8**). Stuff uncooked manicotti shells with ricotta mixture, and arrange in a single layer in the dish. Cover with remaining sauce. Sprinkle with remaining mozzarella and Parmesan cheese. Bake in preheated oven for 45 to 55 minutes, or until noodles are soft.
~ Chicken Corn Chowder **Picture to follow**
2 cans Corn (drained) 2 T flour
1 T oil 1/2 t thyme - crushed
3/4 onion 1/4 t salt
1 can Chicken broth 1/4 t pepper
1 cup cubed potatoes - pealed 1 1/4 cups chopped, cooked chicken
1 cup half-n-half, light cream, or milk 2 slices of bacon - if you want to add it
Heat oil. Add onion cook till tender. Add corn, broth, potatoes and bring to boil. Reduce heat, simmer covered 20 minutes stirring occasionally. Different bowl put milk, flour, thyme, salt, and pepper. Mix. Stir into corn mixture, cook till thick and bubbly- stirring occasionally. Add chicken and bacon. Cook and stir till heated thoroughly.
